Straight A's at Bee's Knees Bakery

By Jake Levin

From its modest beginnings as a gift shop to a full-scale bakery, Bee's Knees Bakery has undergone quite a transformation.

Jaime Wilkins, who owns the bakery with her husband, has been a part of the operation since was just 16 years old back in the gift shop days. Originally located in Crawford, Ga. And owned by her mother, the location shifted 20 minutes down the road to Athens. It was there that Wilkins's aunt joined the venture; she'd always had a dream of owning a bakery, as Wilkins recalled.

Over the years, Wilkins and her husband became more and more involved with the business and by January 2016, the duo took the leap and took sole ownership of Bee's Knees Bakery.

Every item on the menu is carefully handcrafted, ensuring no customer ever walks out the door disappointed. A myriad of baked goods are available for purchase six days a week, Mondays through Saturdays from 9:30 a.m. to 6:30 p.m.

Some intricate, three-dimensional cakes are among the specialties at Bee's Knees Bakery, each cake extremely realistic in what they represent. Some examples include the University of Georgia logo, shoes, grills and football helmets.

"We've done a lot of very interesting cakes," Wilkins said.

There are many popular flavors at Bee's Knees Bakery for cakes and other goods, but the top of the list includes red velvet, vanilla buttercream, key lime, champagne pop and pumpkin spice. Wilkins lists her personal favorite as the salted caramel option.
