Sample Farm to Table Southern Local Fare at Dovetail

Founded in 2012 in Macon, Georgia, Dovetail specializes in gourmet southern cuisine and has a farm to table philosophy. The restaurant has been featured in Southern Living Magazine and has received Opentable.com's "Diners' Choice Awards" for most booked restaurant in Macon. As part of the Moonhanger Group, Dovetail has several sister restaurants, the Rookery, H&H Soulfood, and the classically restored Cox Capitol Theatre.

The name Dovetail is indicative of its culinary style: a merging of traditional and modern takes on southern foods. Creating an experience that is reminiscent of any southern dinner table, Dovetail reimagines regional specialties in a rustic and sophisticated dining room that tips its hat to Georgia's agrarian history.

Dovetail's goal was to achieve 100 percent locally-sourced ingredients, an ambitious target in this industry. The restaurant's patrons loved the idea and encouraged the owner on his culinary quest to reinvent the menu.

"The community responded well and was on board with our new relationships and our continual exploration of local food partners," Chad Evans, Dovetail's owner, said. "Thursday's farm fresh offerings expanded into menu items, and we decided it was time to further the exploration by opening up a space where design and crafted ingredients came together in an inspired farm to table menu."

The menu changes weekly, in sync with the local bounty and Dovetail's relationships with the local farms. For starters, Evans highly recommends their 'put ups', which are rotating small jar samplings such as the smoky pimento cheese, homemade bacon marmalade, a corn andouille dip, and a butter pea hummus all served with locally baked bread.

One of their recent hit recipes is a sea scallop dish with a Japanese bourdon sauce served with the sticky Carolina gold rice and mustard greens and a radish salad with ginger vinaigrette. The cracked pie, the most photographed item in the Moonhanger Group outside the Rookery burger, is topped with a homemade salted caramel ice cream.

Dovetail's ambiance is characterized by elegance, spaciousness, simplicity, and clean lines. Industrial pendant lights hang over the rustic dinner tables, and handwoven rugs and linen drapes dress up the place. At Macon's classic cocktail bar, you will find a selection of over 70 distinctive whiskeys, lots of local brews, crafts, and imports. In fact, Dovetail offers one of the best by the glass selections in Macon.

"The room has rustic and nostalgic sentiments, but like the farm to table moniker, these words alone do not completely represent the Dovetail room and experience," Evans said. "It's a clean and welcoming design and décor, and the space invites an exciting anticipation of what is in going to happen next."
